Fasolada


4 tbsps olive oil
1 large onion, sliced
4 medium carrots, trimmed, peeled, halved lengthways and thinly sliced
2 sticks of celery, chopped
2 large garlic cloves, crushed
2 x 400g tins of cannellini beans, drained
1 can of chopped tomatoes
1 litre vegetable or chicken stock
Salt and pepper
3 bay leaves
Large bunch of flat leaf parsley, chopped
1 tbsp soy sauce
Squeeze of lemon juice

Make it early in the morning and by the time dinner comes around, all the tastes will have melded together to make a wonderful soup.

Heat the oil in a v large frying pan. Gently fry the onion, carrot, celery, garlic cloves and crushed garlic till soft. Add the tomatoes, drained beans, stock, bay leaves, flat leaf parsley - season well. Bring to the boil, then simmer for about 20 minutes. Just before serving, add the soy sauce and lemon juice.
