Marinade for Lamb loin chops


Enough for 4-6 chops
1/4 cup red wine vinegar
1/4 cup balsamic vinegar
1/4 cup olive oil
2 tbsps sesame oil
2 tbsps rosemary, chopped fine
3 garlic cloves, crushed

4-6 lamb chops, fat trimmed
1/2 tsp salt

Make the marinade and leave for half an hour, to mix.

Meanwhile, get the lamb chops out of the fridge to reach room temperature. Rub the salt in lightly on both sides.

Dip the lamb chops in the marinade, cover on both sides and leave in a non metallic dish to sit for 10 minutes. Turn over and do the same to the other side for 10 minutes. Heat up the grill and line a baking tray with foil with a rack above.

Put the lamb chops under the grill and cook for 5 minutes. Check and turn over - keep an eye on them so that they do not burn or overcook. Once ready, take out and leave to sit.

This is an excellent meal, made with bean mash and red cabbage.
