Chocolate Fudge Icing


3oz butter
4 1/2 tablespoons of milk
12oz icing sugar, sifted
3 tablespoons cocoa powder, sifted

Put the butter and milk in a small saucepan and heat gently until melted. Add the icing sugar and cocoa and beat until smooth and glossy. Cool slightly, then pour over the cake, spreading with a palette knife to cover completely.

Variation - coffee fudge icing

Replace the cocoa with instant coffee powder.
