Jammy Buns
- 225g self raising flour or plain (+ 1.5 tsp baking powder)
- 100g cold unsalted butter, cut into small chunks
- 100g caster sugar
- 1 large egg
- 1 tbsp milk (any kind)
- 50g jam (any, but blackcurrant is great)
Preheat oven to 180C/160 Fan/Gas 4 and line 1-2 baking trays with baking paper.
Sift the flour into a large mixing bowl, then drop in the butter. Using your fingers, rub the butter into the flour until it resembles fine breadcrumbs. Stir in the sugar.
Use a fork to mix the egg and milk together, then add to the mixture using a butter knife. Next make a rough, sticky dough with your hands.
Dust a clean surface with a little extra flour and tip on the dough. Gently press together to form a smoother round.
Halve the dough, then halve again. Cut these four quarters into 3's, so you have 12 or if they are a little too big, cut into about 14. Roll each piece gently until you form a ball, then squash to flatten a little.
Arrange the biscuits on the trays, leaving space between them. Press your thumb firmly down in the middle of each biscuit to form a hollow. Add a teaspoon of jam into each hollow.
Bake in the oven for 12 - 14 minutes or until lightly golden. Allow to cool completely before storing away.
