Shredded Chicken Pasta - for 4


I believe Ben, my son, ate this fairly regularly at University. As you'll see, it is typical student food - note the lack of any green vegetables, and the sauce is bought - thereby eliminating the need to make unnecessary effort! However, it is very easy to eat and is delicious, so I'm not going to complain. If you want to be healthy, make a big salad. If you want to save money, make the tomato sauce yourself with a can of tomatoes, chopped onions, crushed garlic and some basil leaves, reduced till thick.

The spices
Puszta - dried spices, particular to Lidl
If you do not have a Lidl near you, you can use:
Paprika
Thyme
Crushed mustard seeds
Salt & pepper

The rest
Olive oil
1 clove of garlic, crushed
3 chicken breasts, skin removed
2 x 150g Dolmio Sundried Tomato stir-in Sauces
or Spicy Pepperoni
(I'm sure you can make your own tomato sauce, it just needs
to be reduced down till it is quite thick)
Puszta - spice mix from Lidl
Pasta - for 4 people

Prepare pasta - enough for 4 people. Fusilli is good. The idea is to complete the chicken by the time the pasta is done.

Get a large frying pan - (PLEASE do not ruin someone else's (or your own!) favourite frying pan - no Teflon or specially coated surfaces, because it will get scratched to pieces when it comes to shredding the chicken).

In the pan, add 1 tbsp of oil and shake in about 2 tbsps of Puszta. Add the 3 chicken breasts to it. Fry, turning the chicken often to cover in the spices. As it is cooking, start to cut lumps off, using a pair of scissors. Continue to turn the pieces. Add more Puszta and a clove of crushed garlic. Keep cooking until the chicken pieces are cooked through.

Take 2 forks and start tearing all the pieces up (as seen in Chinese restaurants when making duck pancakes). Try not to scratch the pan up too much. When it's done, add the 2 stir-in sauces.

Fry till thick, all the while stirring. Remove pasta from hob, drain and add a knob of butter. Put pasta and chicken into a big bowl and stir till all pasta is orange.
