Elma's Lentil Pie

 
Short crust pastry
Enough to line a medium pie dish
 
1 good mug of lentils
Twice as much water
 
Fry a large onion till soft in a pot
Add lentils and water
Bring to boil and cook till water is absorbed
 
Add 1 beaten egg
1 par-cooked carrot, chopped fine
Any herbs or spice (I usually put in 1 tsp oregano)
Pepper/a little paprika
1 tomato (skinned & chopped)
Some chopped nuts (optional)
Mix together
Sometimes I add approx 3 tbsps of grated cheese
 
Grease pie dish (1& half inches deep)
Line with rolled out pastry
Put in lentil mixture
Sprinkle some seed like sesame seeds on top

Cook in middle oven  190C/170C Fan/Gas mark 5
Till done which may take 40 mins or so
Stick a knife in it's ass, comes out clean, it's done.
