Pasta Shells with Chorizo and Tomato Sauce


1 good chorizo sausage - skin removed, sliced medium
Olive oil
2 garlic cloves, sliced

1 large onion, sliced
2 tins of tomatoes
Large handful of fresh basil

Pasta - enough for 4-6 people

First of alll, fry the chopped chorizo over a low heat in a pan. There is no need for oil, it has enough of its own. Once lightly browned on each side, tip onto kitchen roll and drain away any excess fat.

In the olive oil, fry the garlic and chopped onion. Return the chorizo to the pan with the tomatoes. Tear up the basil and leave it to reduce to a lovely, sticky sauce, on a very low heat.

Cook the pasta. Either mix the pasta and sauce together in a large serving dish, or serve separately. Make a simple green salad. Grate some fresh parmesan. Open a bottle of chilled white wine. Call everyone to dinner. Couldn't be easier!
