Spare Ribs


During the summer we went over to Matt's place and tried out this fantastic recipe. After I got the recipe from Matt, I made it at home for dinner one night, and the kids went mad! It's become a real favourite of Ben's.

This is it:

Grill your ribs for 5 minutes on each side, or until the meat changes colour.

Then heat the following on the hob, till it all starts bubbling.

4 tbsp runny honey
4 tbsp orange juice
4 tbsp white wine vinegar
3 tbsp soy sauce
3 tbsp ketchup
1/2 tsp mustard powder
2 cloves garlic
pinch paprika
some chopped chilli (to taste)
salt & pepper


Mix it all together and get the mixture hot. Then pour the sauce over the ribs, put in the oven, and cook at 180C/160C Fan/Gas Mark 4 for about 30 - 45 minutes. You may need to turn the ribs during that time.

This sauce goes well with about ten ribs. If in doubt, always make more than less (double everything), 'cos it's really quite marvellous with garlic bread and salad.
