Braised Lettuce and Peas (for 6)


2 gem lettuces
Knob of butter
1 tbsp flour
300ml chicken/veg stock
Few sprigs of mint, or 1/2 tsp mint sauce
Enough peas for 6 people
1/2 lemon


Wash the lettuces and slice them finely. Melt the butter in a large frying pan and add the flour. Stir for a few minutes to cook the flour in. Add the stock slowly, stirring all the time. Add the mint and mix with a whisk until the sauce is smooth.

Add the peas, lettuce and lemon juice. Pour over a little boiled water, season, stir and then cover with a lid. Simmer for 10 minutes or so on v low heat.
