Spring Greens with garlic, chilli, lemon and peanuts


1 head of spring greens, shredded
1-2 tsps garlic & chilli paste
1 onion, sliced
1 tsp peanut butter
Handful of peanuts, roasted and crushed
Lemon juice
Salt and pepper to taste

Shred the spring greens and cook for 10 minutes in either chicken or vegetable stock. Drain.

Dry fry the peanuts for several minutes in a frying pan, being careful not to burn them.
Allow to cool before crushing lightly with the back of a large serving spoon.

Chop onion and sauté in a little oil with peanut butter, garlic & chilli paste till soft.

Into a steamer, add the drained greens, placing the onion mix and crushed peanuts on top. Steam for up to 10 minutes.

Serve in a bowl with squeezed lemon to taste on top and season with salt and pepper.
