Sprouts with Garlic and Chilli - 4 people


1/2 oz butter or margarine
1 or 2 large shallots, sliced
1 garlic clove, crushed
V small pinch of chilli flakes
Large bowlful of sprouts, finely sliced
Spoonful of water
Salt and pepper

Slice up the sprouts (first removing the hard stalk) and shallots. Heat the butter in a large frying pan and fry the shallots and crushed garlic till soft. Add the chilli and sprouts to the pan and mix well. Throw in a little water, cover with a lid and turn the heat down. Cook for no more than 5 minutes. Season well. It’s ready!

If you have any leftovers, you can make Cannellini bean burgers:

Make a quantity of Garlic Bean Mash, add the leftover sprouts and mix well together. You may need to add a little lemon juice or soy sauce. Form into burger shapes, dust with flour and fry gently. These make a really good snack.
