French Style Puy Lentils


1 onion
1 celery stick
1 carrot
2 garlic cloves
6-8 sprigs of parsley, including stalks
1 1/2 tbsps olive oil
200g puy lentils or green lentils
Vegetable stock
1 bay leaf
Salt and pepper


Finely dice the onion, celery and carrot. Chop up the parsley.

In the oil, fry the vegetables until the onion is soft. Stir in the lentils and pour over enough stock to cover by about 1 inch.

Add the parsley and bay leaf and bring to the boil. Lower the heat to a simmer, cover the pan and cook for about 35 minutes until the lentils are soft.
