Warm Tomato and Mixed Bean Salad


420g can mixed beans in water, drained and rinsed
1 tbsp olive oil
1/2 tbsp fennel seeds, lightly crushed
400g plum tomatoes, chopped
200g cherry tomatoes, halved
8 tsp sweet chilli sauce
2 tbsp lemon juice
1 pack flat leaf parsley roughly chopped
Salt

Place the beans in a salad bowl. In a frying pan, heat the oil with the fennel seeds for about 1 minute, until sizzling.

Add the tomatoes to the pan and fry for a few minutes, turning them gently until just beginning to soften. Using a slotted spon, drain the tomatoes and add to the beans.

Add the chilli sauce, lemon juice and a little salt to the pan and stir over a low heat for a few seconds. Pour over the beans, add the parsley and toss the ingredients before serving.
