Cannellini garlic mash


For 4 people

1 large shallot, finely chopped
1 celery stick, finely chopped *optional
2 garlic cloves
Couple of sprigs of thyme or tarragon
Olive oil for frying
Salt and pepper
Couple of tablespoons of french dressing
1/2 tsp chopped capers
1 400g can of cannellini beans, drained and washed

In a large frying pan gently fry the garlic, onion and celery in the oil until soft. Add the thyme (or tarragon) and season well with salt and pepper.

Add the beans to the pan and heat through, not allowing them to burn. Turn off the heat, add the french dressing and capers to the beans and mash thoroughly with a potato masher.

Before serving, check the seasoning - it might need a bit of lemon juice to give it a kick, if you like it that way.

This is a great alternative to mashed potatoes. It goes really well with chipolatas and gravy or with Salmon Thai Style in the fish section.
