Mixed bean mash


1 -2 cans of beans or equivalent amount of pressure cooked beans
Chicken or vegetable stock plus 3-4 tbsps of water
Chopped parsley
Salt & pepper
Capers or roasted tomatoes, chopped
Roasted garlic sauce

In a saucepan slowly heat up the beans, stock, parsley, garlic sauce, capers or tomatoes. Season well.

Once heated through, mash thoroughly with a potato masher.

This is a great alternative to mashed potatoes. It goes really well with lamb chops.
