Coleslaw


For 4 people

1/4 of smallish white cabbage, shredded 
1 large carrot, grated
1/2 white or purple onion, thinly sliced

3 tsbp mayonnaise
2 tbsp white wine vinegar
Lemon juice, to taste
Mustard, to taste (optional)

Plenty of salt and pepper to taste

Shred the cabbage (first removing the hard stalk) with a knife and grate the carrot into a large bowl. Slice the onion as thinly as possible and add to the bowl.

Pour on the vinegar and mayonnaise, add seasoning and mix very well. You can add lemon juice and/or mustard if you like too. Cover with clingfilm and put in the fridge for at least half an hour before eating.

This will last for several days as long as it is kept in the fridge.
