Roast Potatoes (my style)


For 4 people


If you are making potatoes for 4 people, with enough for seconds, you will need at least 4 medium potatoes + 2 more (and even more if everyone is very hungry)

6 medium/large potatoes, peeled, each potato chopped into 4 equal parts
Maris Pipers are by far the best for this, OR King Edwards
Olive oil, couple of tablespoons
Salt

Peel and chop the potatoes and place in large pan of boiling, salted water. Cook for about 6 - 8 minutes approximately, or until they are quite soft, but not falling apart. Drain and leave to stand in a colander for a few minutes. Give them a good shake, to roughen up the edges.

In a large baking tray, pour a few tablespoons of oil and heat up slowly on the gas burner/hob. Pour the potatoes in and spread out, turning each one so that it is covered in some of the oil.

Put into a hot oven - about 200C degrees/180C Fan, or Gas Mark 6 for approximately 30 to 45 minutes. Check after 20 minutes, turning over in the oil. Return to the oven, until they are crispy and golden. Sprinkle with sea salt and pepper.

Variations on a theme

Add a crushed garlic clove to the oil, before putting in the oven
Throw in a variety of herbs - parsley, basil, thyme, rosemary
Add chopped chillies to the oil
Add some curry paste to the oil
