Spicy Couscous


For 4 people

200g couscous
2 tbsps butter
1 small onion, finely chopped
2 garlic cloves
1/2 tsp cinnamon
1/4 tsp ginger
Pinch of cumin
30g raisins
30g chopped apricots
Toasted almonds
250ml vegetable stock, hot
Some flat leaf parsley, chopped finely
Salt and pepper


Fry the garlic and onion in the butter until soft. Add the cinnamon, ginger and cumin and fry till they turn dark.
Add the couscous and a little more butter and fry till all is mixed well.
Add the raisins and chopped apricots to the mixture and then turn out into a bowl.
Pour over the hot vegetable stock. Mix the couscous and then cover with a lid and leave for 5-10 minutes.
Lightly toast the almonds. Stir the couscous again, adding salt and pepper. Add in the almonds and parsley.

If you need to heat it up, put in the oven for 5-10 minutes, dotted with butter and covered with foil.
