Broccoli Salad


For 4 - 6 people

1 large broccoli, chopped small including stem
1/2 red onion, chopped into small cubes
1 apple, including skin, chopped into small cubes
Large handful of walnuts

Dressing
2 1/2 tbsp apple cider vinegar
3 tbsp Dijon mustard
1 1/2 tbsp maple syrup
1 large garlic clove, minced
4 1/2 tbsp extra virgin olive oil
sea salt & freshly ground black pepper
1 large squeeze of lemon juice

Chop both the florets and stalk of the broccoli into small even pieces, finely dice the red onion, slice the apple into thin cubes and roughly chop the walnuts. Combine in a large bowl.

In a small jar or bowl, mix all the dressing ingredients together and give it a good shake or stirring. Using your judgement, pour on the dressing (leaving a couple of spoonfuls to add at the table) over the salad and cover with clingfilm and put in the fridge for at least half an hour before eating. Before serving, add some more dressing and mix well.

This will last for a couple of days as long as it is kept in an airtight box in your fridge.
